Baked Sweet Potatoes with Cinnamon


 
Baked Sweet Potatoes with Cinnamon
Batata Doce Assada no Forno

Serves:  4
INGREDIENTS:

1kg (about 6)        sweet potatoes washed and quartered or sliced
4                             cinnamon sticks
50g                         butter or margarine cut into blocks
15ml                      salt
15ml                      garlic flakes
45ml                      olive oil

5ml                        white pepper

60ml                     brown sugar

 Method:

Place the sweet potatoes in a roasting pan.  Add the cinnamon sticks, butter or margarine, salt and garlic.  Drizzle with the olive oil and season with white pepper.

Cover with foil and bake for approximately 40 minutes.

Remove the pan from the oven and remove the foil.

Sprinkle the brown sugar over the sweet potatoes and return to the oven for 10 minutes, or until the sweet potatoes are soft.

Serving Suggestion:

Wonderful as an accompaniment to roasts!
